Lamb Steaks Recipe - per person
Ingredients:
1 Lamb Steak (Cut from the leg)
1 Clove Garlic
1 Sprig Rosemary
2 Tbspn HLD Olive Oil
1 Tbspn Toasted Cumin
1 Tbspn Cracked Black Pepper
1 Tbspn Butter
1 Tbspn Honey
Sea Salt to taste
Method:
1) Pat down the steaks completely dry to ensure a good crust is formed when cooking.
2) Sprinkle over cumin and black pepper, and coat with olive oil, rubbing in the marinade.
3) Place the steak in a smoking pan over a medium high heat.
4) Once a crust has formed, flip it over. Each side should be fried for 2-3 minutes.
5) Add in rosemary, garlic, and butter. Reduce the heat and baste with butter for 3-4 minutes.
6) Rest for 5 minutes, sprinkling with sea salt and drizzling with honey before slicing up to serve
