Musakhan is a traditional Palestinian roast chicken dish, served with caramelized onions, flatbread, and pine nuts. The name “Musakhan” literally translates to being "heated up" in Arabic since the components of the dish are prepared separately and cooked up together in an oven. This dish is traditionally prepared to celebrate the season of the olives at the end of the Olive Harvest, but is also popular year-round for family gatherings, festivities, and more. Tender, flavorful chicken and golden caramelized onions, paired with a light, crispy flatbread, is truly a match made in heaven.

The recipe consists of a few simple but delicious ingredients - chicken that is seasoned to perfection, savory sweet caramelized onions, and light crispy flatbread - to wow your tastebuds.

Here is our recipe for making the best Musakhan for yourself and your loved ones:

Ingredients list (serves 10):

The ingredients you will need to make the perfect Musakhan:

  • 15 g allspice
  • 8 g ground cardamom
  • ½ tsp ground cumin
  • 75 g sumac
  • 10 chicken legs
  • Salt to taste
  • 100 ml olive oil
  • 7 red onions
  • 100 g pine nuts
  • ⅔ Middle-eastern flatbread
  • 2 lemons


  1. Preheat the oven.
  2. Season the chicken using half of the mix. Pan-fry the chicken for 2 mins until golden.
  3. Fry off sliced onions with remaining seasoning (add water if necessary).
  4. Add onions to the oven dish and place the chicken on top of the onions.
  5. Set the oven to 190 degrees Celsius and cook for 20 mins.
  6. Serve on flatbread with toasted pine nuts and sumac.

Tips to Enhance your Experience: 

You can substitute the Middle-eastern flatbread for Indian flatbread. Both complement the recipe equally well. You may also add HLD’s Za’atar to add a depth of flavor and spice to the dish. This blend of sumac, whole sesame seeds, oregano, and a hint of salt can instantly elevate any dish you pair it with!
