Za’atar and Cheese Scones

A modern twist on your classic Scone - Za’atar and Cheese Scones

Makes 10-12 scones
Ingredients:
350g self raising flour
1 tbspn black seed
1 tbspn sea salt
4 tbspn HLD Za’atar
1 tspn baking powder
1/2 block Halloumi chopped to preference
100g grated cheddar
2 tbspn HLD Extra Virgin Olive Oil
100g cold butter in cubes
175ml cold milk
1 beaten egg to glaze
Method:
1) Combine all dry ingredients into a mixing bowl and mix well.
2) Add cubed butter and mix (ideally using a food processor or stand mixer but by hand is great too!) until the consistency resembles crumbly sand.
3) Add in chopped halloumi and mix.
4) Add in olive oil and milk, gently mixing together until it is one uniform piece of dough with no cracks.
5) Allow to rest for 10 minutes before pressing out gently onto a floured surface to a 1 inch thickness.
6) Use a lightly floured circular cutting shape or a glass to press out scone shapes.
7) Place onto a lined baking sheet, glaze with eggwash and top with a small amount of grated cheddar.
8) Bake at 210°C for 10-12 minutes. Once rested for 10 minutes, enjoy by spooning on heaped amounts of Labneh and a good drizzle of Palestinian olive oil
