Scotch Egg

A modern Palestinian twist on Halal Scotch Eggs

For 3 Scotch Eggs
Ingredients:
3 medium eggs
6 Merguez sausages
2 tbspn HLD Extra Virgin Olive Oil
2 tbspn plain flour
1 beaten egg with a splash of milk
100g breadcrumbs
3 tbspn HLD Za’atar
Vegetable oil to deep fry
Method:
1. Bring a saucepan of water to a rolling boil and carefully lower in the eggs, cooking for 6.5 minutes.
2. ⁠Remove the eggs and place into ice cold water to halt the cooking process, before peeling.
3. ⁠Remove the sausages from their skins and using olive oil to grease your hands, carefully mould the meat around the eggs, evenly encasing it.
4. ⁠Combine the breadcrumbs and za’atar before rolling the covered egg in flour, eggs and breadcrumb mix.
5. ⁠Deep fry the egg on all sides evenly and serve with green chutney.
